C'est La Vie chef gives Mardi Gras pastries healthy twist


HATTIESBURG, Miss. - A local french pastry chef is kicking-off Mardi Gras and giving his pastries a healthy french twist.

Chef Jean Lukowski and owner of C'est La Vie on Highway 98 said he likes to ring in the New Year by making his one-of-a-kind king cakes for Hattiesburgers.

“My king cake, I made my dough from scratch it is a brioche dough and we make 24 hours fermentation, so we do today, we're gonna use that dough tomorrow" said Chef Lukowski.

He added, "So the dough has time to ferment over night in the fridge, and for my king cakes I try to use less sugar, more fruits.”

Chef Lukowski said its important to bring culture into the area, especially with Mardi Gras being widely celebrated next month.
